PhD Defense Océane Duluins on the Protein Transition

This dissertation examines the concept of the protein transition, reconsidering of the role of animal proteins within contemporary food systems. It explores both the conceptual challenges associated with its definition and the range of disciplinary perspectives mobilised to study it.

Scientific narratives for the protein transition:
will systemic change be possible?

This dissertation focuses on the concept of the protein transition, understood as both an analytical and normative framework aimed at rethinking the role of animal proteins in our food systems. The objective is to examine this concept in terms of its definition, its uses, and the disciplinary approaches that refer to it. More specifically, the research is structured around three axes: (1) investigating the meanings and functions attributed to the protein transition, particularly with regard to its potential contribution to transforming food systems; (2) analyzing the extent to which integration and communication across different disciplines enable (or, conversely, hinder) progress in this transition; and (3) reassessing the options and solutions currently being considered by situating them within the context of the initial problems that led to the conceptualization of the protein transition as a necessity.
